take her out on a trail ride!! that could be so romantic. or if you want an actual gift, you could get cute horse jewelry. or make a card with a horse on it, if it’s bad that would be so cute!! haha. just look around at the local saddlery, or online ((http://www.backinthesaddle.com/)). good luck!

You can take her to a rodeo or horse show;
there are several "western" quilt kits on the market (you buy it and put it together);
If she has a deceased horses hair, you can have a bracelet or necklace made from it (depending on length available) from PonyLocks.com;
you can muck her stalls for her and feed them; how about sculptures or paintings;
a nice coffee table book with beautiful drawings; take her horseback on a beach or on a trail;
do a dude ranch trip;
make a CD that has songs on it about horses…

I don’t know, I’d probably wouldn’t get her something to do with horses myself. Never know what she’ll like, so best to play it safe and go with chocolates or a dvd you know she’ll like. Maybe take her shopping and let her pick something out, then at least you can be sure that she’ll like it.

A little horse plushie or keychain! Anything with a little hoof print, or things like that. Mabey get her a little t-shirt, or make her a horse card online! If it's something romantic, she'll fall head over heels for it.
